I wanted something quick but satisfying — something that felt a little indulgent yet simple enough to make on a weekday afternoon. This toast comes together in minutes and delivers a perfect balance of creamy ricotta, jammy figs, earthy chestnut honey, and bright thyme. The balsamic glaze and flaky salt finish it with a tangy, savory touch that keeps it from being too sweet. Serve it as a light lunch, an elegant snack, or an appetizer with wine.

2 slices sourdough bread, lightly toasted
½ cup ricotta cheese
1-2 whole preserved figs sliced (I used Fruit Bliss Soft & Juicy Organic Dried Figs)
Chestnut honey (or any good quality honey)
Fresh thyme leaves
Balsamic glaze (I used Monini Glaze)
Maldon Flaky sea salt
METHOD
In a small bowl or using a hand mixer, whip the ricotta until smooth and airy. Spread the whipped ricotta generously over the toasted sourdough slices. Arrange the sliced figs evenly on top, then sprinkle with fresh thyme leaves. Drizzle the chestnut honey across the surface. Finish with a generous drizzle of balsamic glaze and a pinch of flaky sea salt. Serve immediately while the toast is still crisp.
